Organic Couscous Salad

This recipe is one one my favorite. It’s light and super easy to make..


This dish is great for a light lunch or dinner.


Serves: 2

1/3 cup of couscous (water 1/3cupx2)
1/4 Tsp low sodium veggie/chicken stock (optional)
Lemon juice 1 Tsp
Chili flakes (optional)
Sugar snaps/snow peas- sliced (about 10pcs)- I blanched it for a while but raw is fine too
Grape tomatoes- cut into half
Mixed salad leaves

1. Put couscous in a bowl and add hot water then, cover it with a lid (you may mix your chicken stock at this stage)
2. Get all your veggies ready.
3. After probably 20mins- check your couscous. It should look fluffy and absorbed all the water. Fluff the couscous up by using a fork and add lemon juice and chili flakes and mix well.
4. Add and mix your couscous with all your veggies. Serve with Spicy Lemon & Herb Marinated Chicken (recipe in older post). Enjoy!
