This is how I like to make my salad, fresh and crunchy. With very few ingredients, you can create this salad in no time.
This salad would be great with any fish, chicken or steak dishes. It’s very versatile and simple to make. Plus, the ingredients are inexpensive and this makes quite a batch, which is great if you have guests coming over.
1 Tomato- Diced
1/2 Cucumber- Diced
2-3 Tbs- EVOO (Mild)
Mix all ingredients well. Best served chilled or room temperature and served over a bed of greens. Enjoy!
Good in the fridge for 2 days.
