This is one of my favorite recipe. It is such a simple dish and easy to make. It’s a great meal for those who are watching their carb intake.
You can simply prepare this dish the night before and bring it to work for lunch. You may have it as a side dish with brown rice or just a small bowl of fruits & salad.
1/2 capsicum- cored
1 small/medium egg
Cooked Spicy Chicken Strips (look up for the recipe at my previous post)
Shredded Spinach – a handful
Diced tomato- 1/4 of tomato
LOW FAT Cheese
1. Stuff the capsicum by putting the chicken, diced tomatoes, cracked egg, shredded spinach and lastly cheese on top.
2. Bake in oven at 200C for 20 to 25minutes. Sprinkle salt and pepper to taste. Enjoy!
As you can see, I use a lot of my spicy chicken strips in my recipes. It saves a lot of prep time coz the cooked chicken been kept in the fridge and always ready to be used.
